Make the Best Vanilla Bean Ice Cream from Real Vanilla

Make the Best Vanilla Bean Ice Cream from Real Vanilla

Vanilla ice cream is a timeless dessert—but when made with real vanilla beans, it transforms into a luxurious treat bursting with natural flavor. Unlike extract-only versions, vanilla bean ice cream delivers visible specks of vanilla seeds, rich aroma, and a smooth, creamy depth that only whole pods can provide.

Why Use Real Vanilla Beans?

Vanilla beans contain hundreds of aromatic compounds, including vanillin, that give ice cream its signature taste. Using the actual pod allows you to infuse your base with a deep, nuanced vanilla flavor and add gourmet appeal with speckled seeds.

What Type of Vanilla Beans Are Best?

For homemade ice cream, Grade A Vanilla Planifolia beans from Indonesia are ideal. They’re plump, moist, and easy to work with, offering a bold and slightly smoky flavor that pairs beautifully with dairy.

Homemade Vanilla Bean Ice Cream Recipe

Ingredients:

  • 2 whole vanilla beans (Grade A, preferably Planifolia)

  • 2 cups thickened cream

  • 1 cup whole milk

  • ¾ cup sugar

  • 4 large egg yolks

  • Pinch of salt

Instructions:

  1. Prepare the Vanilla:
Split the beans lengthwise and scrape out the seeds with a knife.

  2. Heat the Cream and Milk:
In a saucepan, combine cream, milk, salt, and vanilla seeds and pods. Heat gently until just simmering. Remove from heat and let steep for 15 minutes.

  3. Whisk the Yolks and Sugar:
In a separate bowl, whisk yolks with sugar until pale and thick.

  4. Temper the Eggs:
Slowly pour a small amount of the warm cream mixture into the egg mixture, whisking constantly. Then add the rest and return the mixture to the pot.

  5. Cook the Custard:
Stir over low heat until it thickens enough to coat the back of a spoon (about 75–80°C). Do not boil.

  6. Strain and Chill:
Strain the custard through a fine sieve into a bowl. Cool completely, then refrigerate for at least 4 hours or overnight.

  7. Churn and Freeze:
Process in an ice cream maker according to manufacturer instructions. Freeze until firm.
